Ragusa caciocavallo is a PDO (Protected Designation of Origin) Italian cheese produced in Sicily in the province of Ragusa. It is easily recognizable from its typicalparallelepiped shape, it’s a smooth-rind semi-hard cheese, with a straw-yellow colour and a white and stringy texture; the more it matures the more its taste gets sharp.


Mature cheeses are healthy because they contains lots of precious elements for our organism , as calcium and phosphorus, high biological value proteins, A and B group vitamins. These vitamins helps protecting the skin and the mucous membranes.
